VERY VEGGIE PASTA MEDLEY


We recommend serving this pasta medley cold, with rolls and fresh fruit. This combo of colorful vegetables and flavorful dressing is sure to bring out the veggie lover in everyone! It’s perfect for bringing back that summer-day feeling.

Start with:
1 box pasta cooked al-dente (We recommend tri-color twistys or bow-ties) drain, strain and rinse in cool water.

In large bowl combine:
1.c. chopped broccoli flowerettes
½ c. sliced black and/or green olives
1 c. cut peppers, red, green or yellow (or all 3)
½ c. canned or fresh corn
¼ c. thinly sliced sweet onions
4 chopped pickles
½ small chopped cucumber
¼ c. chopped mushrooms
½ c. thinly chopped baby carrots
1 c. cubed cheddar cheese
1 clove minced garlic
1 bottle of Italian dressing or:
½ c. olive oil
¼ c. your choice of vinegar
Garlic powder, Italian seasoning
Add salt, pepper and parmesan cheese to taste.  
Add the pasta to this mixture of colorful vegetables, stir well and Voila! You have dinner (or lunch).

Option 1: To make this a main course you can add cooked flavored and cubed chicken, tofu or tempeh.

Option 2: Any vegetables may be used for this pasta medley, omit anything you (or picky children) do not like, and add any veggies you love. Play around with it, is amazing how many combo’s you will come up with.

STRESS RELIEF

Suggestion for that picky child
Here are a few things to try when you child refuses to taste anything new:

1. Sauces, does your child love a certain sauce? Pour soy sauce, tomato sauce, ketchup or maple syrup in a small side dish and let them dip away

2. Make a small portion “just for him/her” without all the vegetables they don’t like

3. If all else fails give them a bowl of cereal and enjoy dinner yourself!

*Make sure you understand the assignment – if you don’t ask questions*

REMEMBER THE INSTRUCTIONS

If your paper is supposed to be clear, informative or subjective

Keep this in mind as you write

Keep a hard copy of your assignment (a printout) nearby

And a copy of The Writer’s resource Handbook for references

*Read your paper out loud - and read it often*

GIVE YOURSELF CHECK POINTS

Am I off topic?

Am I giving too much information?

Am I giving enough?

Is this clear?

And most importantly;

Would I need to explain my paper or could I just hand it to someone and say, "read this"?

And remember you don’t have to love your paper but you still have to do it, it is just an assignment, not your life’s work.
